Raised Cornmeal Muffins - cooking recipe

Ingredients
    1 pkg. yeast
    1/4 c. lukewarm water
    1 c. cornmeal
    2 c. scalded milk
    1 tsp. salt
    1/2 c. sugar
    1/2 c. shortening
    2 beaten eggs
    4 to 4 1/2 c. flour
Preparation
    Soften yeast in water; pour milk over cornmeal, salt, sugar and shortening.
    Cool.
    Beat in eggs and 2 cups flour.
    Add yeast and mix well.
    Stir in flour.
    Cover and let rise until double in bulk, about 1 hour.
    Stir down; spoon into greased muffin cups.
    Fill about 1/3 full.
    Cover and let rise until double in bulk.
    Bake 15 to 20 minutes at 400\u00b0.
    Brush with melted butter.
    Makes about 2 dozen.
