Chili Rellenos - cooking recipe

Ingredients
    6 long green chilies
    1 lb. cheese, in strips
    flour
    3 eggs, separated
    1/2 tsp. salt
Preparation
    Place chilies under broiler.
    Roast until blistered, remove and place in damp cloth.
    Peel and remove seeds and veins from chilies. Fill chilies with cheese strips; roll in flour.
    Beat egg whites with salt until stiff.
    Fold in beaten egg yolks.
    Dip floured chilies in egg mixture.
    Fry in deep hot fat until golden brown.
    Remove from
    grease; place on towel to drain.
    Serves 6.
