Won Ton Mushroom Ravioli With Mushroom Sauce - cooking recipe

Ingredients
    1/2 lb. mushrooms
    8 large green or black olives
    1 Tbsp. butter
    2 Tbsp. virgin olive oil
    2 Tbsp. finely chopped onion
    1/4 tsp. oregano
    1 Tbsp. finely chopped parsley
    salt
    1 large garlic clove, minced
    fresh ground pepper
    32 won ton skins
    freshly grated Parmesan cheese
    mushroom sauce (follows)
Preparation
    Food process mushrooms coarse rather than fine.
    Pit olives and process finer than mushrooms.
    Heat butter and oil in skillet.
    Add onion, oregano, parsley and mushrooms.
    Salt lightly and cook over brisk heat, stirring constantly 5 to 6 minutes.
    Mushrooms should start to color and onion softens.
    Add garlic during the last few minutes of cooking so it doesn't burn pepper.
    Set aside.
