Zucchini Bread - cooking recipe

Ingredients
    2 c. grated, unpeeled zucchini
    2 c. sugar
    1 c. vegetable oil
    3 eggs
    2 Tbsp. vanilla
    3 c. unbleached all-purpose flour
    1 tsp. baking soda
    1 tsp. salt
    1 tsp. cinnamon
    1 c. chopped walnuts
    1 c. raisins
Preparation
    In a large bowl, mix zucchini, sugar, oil, eggs and vanilla with a big spoon.
    Add flour, baking soda, salt and cinnamon.
    Mix well.
    Fold in nuts and raisins.
    Grease and flour two 9 x 5-inch loaf pans.
    Divide batter into 2 pans.
    Bake 70 minutes at 350\u00b0. Cool 10 minutes in pan, then cool on rack.
    Freezes well.
