Diabetic Tapioca Pudding - cooking recipe

Ingredients
    2 eggs, separated
    2 c. milk
    3 Tbsp. tapioca
    few grains salt
    1 1/2 tsp. liquid sweetener
    1/2 tsp. vanilla
Preparation
    Separate eggs.
    Beat egg whites until stiff but not dry.
    Mix slightly beaten egg yolks with milk in saucepan.
    Add tapioca and salt.
    Cook over low heat or in a double boiler, stirring constantly, until mixture comes to a boil.
    Cool.
    Add sweetener and vanilla.
    Fold in beaten egg whites.
    Makes 4 (1/2-cup) servings.
