Fresh Apple Cake - cooking recipe

Ingredients
    4 c. peeled, diced raw apples
    2 c. sugar
    1 c. raisins
    3 c. flour
    1/2 tsp. nutmeg
    1/2 tsp. cinnamon
    1/2 to 1 tsp. salt
    1 c. vegetable oil
    1 tsp. vanilla
    4 egg whites or 1/2 c. egg substitute
    2 tsp. baking soda
Preparation
    Mix apples, sugar and raisins.
    Let stand 1 hour.
    Stir often. Sift flour, nutmeg, cinnamon, salt and soda together.
    Add dry ingredients to apple mixture.
    Mix by hand.
    Then add vegetable oil, vanilla and egg whites.
    Mix by hand.
    Pour into greased and floured 10-inch tube pan.
    Bake at 350\u00b0 for 1 hour and 15 minutes. May be served plain, with Cool Whip or frosted as desired.
    I never had a failure with this recipe.
    I have used many variations including chocolate chips.
    It stays moist and freezes well.
