Sweet Potato Rings - cooking recipe
Ingredients

pecan or walnut halves
3 lb. sweet potatoes
3 eggs
2 Tbsp. melted butter or margarine
1 c. milk
1 tsp. salt
1/4 c. brown sugar (more if desired)
Preparation

Boil and mash sweet potatoes.
Blend in well beaten egg yolks, melted butter, salt and milk. Fold in well beaten egg whites. Butter a ring mold or Bundt pan. Place nut halves around in bottom of pan and sprinkle with brown sugar.
Cover with sweet potato mixture.
Bake at 350\u00b0 for 45 minutes.
Turn upside-down in large plate. Let stand 5 minutes, then remove pan.
Fill ring with buttered green peas or green limas.
