Squash Casserole - cooking recipe

Ingredients
    6 medium yellow squash or 3 zucchini
    2 eggs
    1 medium onion, chopped
    1 stick margarine
    1 can cream of chicken soup
    4 slices American cheese
    1 c. herb stuffing mix
    1 (8 oz.) carton sour cream (optional)
    1 (2 oz.) jar diced pimento (optional)
    1/4 tsp. oregano
Preparation
    Cook squash in small amount of water until tender; drain well and mash.
    Combine soup, sour cream, oregano, pimento, onion and butter.
    Blend well; add squash, stirring gently.
    Lightly grease 2-quart casserole dish.
    Alternate squash mixture and cheese (cut into strips).
    Bake at 350\u00b0 for 30 minutes or until lightly brown.
