Eggplant And Seafood Casserole - cooking recipe
Ingredients

2 medium eggplant
1/2 c. chopped onion
1/2 c. chopped celery
2 garlic cloves, minced
2 hamburger buns
2 eggs, beaten
1/2 lb. crab meat
1 lb. shrimp, boiled and peeled
4 tsp. margarine
1/2 c. green onions
1/2 c. parsley
season as desired
Preparation

Peel eggplant; chop in medium pieces.
Add onion, margarine and garlic.
Place mixture in heavy pot.
Smother mixture until done. Place buns and beaten eggs in bowl until soaked, then add to eggplant mixture and add crab meat, shrimp, green onions, parsley and seasoning.
Mix well.
Place in 1 to 1 1/2-quart casserole dish.
Sprinkle plain bread crumbs.
Bake at 350\u00b0 for 15 to 20 minutes.
Serves 4 to 6.
