Funnel Cakes - cooking recipe

2 eggs beaten
1 1/2 C milk
2 C flour, sifted
1 tsp baking powder
1/2 tsp. salt
2 C vegetable oil
Powdered sugar, sifted
Preparation

In mixing bowl combine eggs and milk. Sift together flour, baking powder and salt. Add to egg mixture. Beat until smooth. In deep skillet heat oil to 360 degrees. Cover funnel spout with finger. Pour 1/4 cup batter into funnel. Remove finger and release batter into oil in a spiral, starting in the center and working out. Fry from 2-3 minutes until golden brown. Turn carefully. Cool 1 minute. Drain on paper towel and dust with powdered sugar.
