Eggplant Patties - cooking recipe

Ingredients
    1 medium-size eggplant
    1/2 c. cracker crumbs
    1 tsp. baking powder
    oil for frying
    1 tsp. grated onion
    3 Tbsp. all-purpose flour
    1 egg, beaten
Preparation
    Peel eggplant and cut into small pieces.
    Boil in salted water until tender.
    Drain well.
    Mash and stir in other ingredients. Mix well.
    Drop by teaspoon onto well-greased griddle.
    Fry on both sides until golden brown.
