Ingredients

1/2 lb. lentils
3 c. water
2 tsp. parsley flakes
1 tsp. salt (optional)
1/4 lb. bacon (optional)
1/2 c. chopped celery
1/4 c. chopped onion
1 clove minced garlic
2 Tbsp. flour
1/4 tsp. pepper
1 (1 lb.) can crushed tomatoes
1 (12 oz.) pkg. Smok-Y-Links
1 bay leaf
Preparation

In a large saucepan, combine lentils, parsley, water, salt and bay leaf.
Simmer until tender (1 hour).
Cut bacon into cubes and cook crisp.
Remove; drain off all but 2 tablespoons of drippings or use 2 tablespoons of oil.
Saute celery, onion and garlic until tender.
Stir in flour and tomatoes and heat to boiling.
Drain lentils (if needed) and discard bay leaf.
Cut sausages into bite size pieces and add to mixture with lentils and bacon.
Simmer 15 minutes to blend flavors.
