Pumpkin Roll - cooking recipe

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. chopped nuts
Preparation

Beat eggs at high speed for 5 minutes.
Gradually add sugar. Stir pumpkin and lemon juice together; set aside.
Sift flour, spices and salt together, then fold into pumpkin mixture.
Spread in a greased and floured jelly roll pan (batter looks like cake batter).
Top with nuts.
Bake 15 minutes at 375\u00b0.
While baking, spread powdered sugar on dish towel.
When done, place on towel and roll up.
Cool.
