Banana Muffins - cooking recipe
Ingredients

1 3/4 c. all-purpose flour
sugar substitute equivalent to 3/4 c. sugar
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
4 medium bananas, mashed
1/3 c. unsweetened applesauce
1 egg, beaten
1/3 c. unsweetened orange juice
Preparation

Preheat oven to 375\u00b0.
Spray muffin tins with vegetable cooking spray.
In large bowl, combine first 5 ingredients.
In separate bowl, combine bananas, applesauce, egg and orange juice. Add liquid ingredients to dry ingredients, stirring until dry ingredients are moistened.
Spoon batter into muffin tin and bake 25 to 30 minutes or until lightly browned.
Yields 12 muffins.
