Spicy Mexican Brunch Eggs(Serves 8 To 12) - cooking recipe
Ingredients

1 lb. bulk sausage, crumbled
1/4 lb. fresh mushrooms, chopped
1 medium onion, diced
salt to taste
freshly ground pepper
8 eggs
8 oz. Cheddar, grated
3 Tbsp. sour cream
3 Tbsp. hot or mild tomato salsa
8 oz. Velveeta cheese, diced
8 oz. Mozzarella cheese, grated
Preparation

Preheat oven to 400\u00b0.
Over medium heat, cook sausage, mushrooms and onion.
Drain well.
Season to taste with salt and pepper.
Combine eggs and sour cream in blender.
Pour into greased 9 x 12-inch baking dish (greased).
Bake until eggs are softly set, 5 to 10 minutes.
Spoon salsa over eggs.
Add sausage mixture.
Top with Velveeta, then Mozzarella and Cheddar.
