Zucchini Fritters - cooking recipe

Ingredients
    2 c. grated zucchini
    2 eggs
    1 tsp. salt
    1/4 tsp. black pepper
    1 small onion, chopped fine
    approximately 1 tsp. chopped parsley
    1/2 c. grated Parmesan cheese
    3/4 to 1 c. flour
Preparation
    Grate zucchini.
    Add eggs, salt, pepper, parsley and grated cheese.
    Add enough flour to hold shape when dropped by tablespoonfuls into hot, shallow oil.
    Brown on both sides and drain on paper towels.
    Serve immediately.
    Serves 6 to 8.
