Ceviche - cooking recipe

Ingredients
    2 lb. fillets of mackerel or other white fish, cut into 1/2-inch pieces
    1 c. lemon juice
    2 tomatoes, peeled and chopped
    1 large onion, chopped
    1/2 c. olive oil
    1 (2 1/2 oz.) jar capers, drained
    10 to 15 pimiento-stuffed olives, chopped
    1/4 c. chopped coriander
    1 avocado, chopped
    1 yellow pepper, chopped
Preparation
    Combine fish and lemon juice in a glass bowl.
    Marinate 2 hours.
    Drain and discard marinade.
