Italian Zucchini Soup - cooking recipe
Ingredients

1 lb. Italian sausage
1 c. chopped onion
2 c. chopped celery
1 medium green pepper, chopped
2 Tbsp. sugar
2 tsp. salt
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. pepper
1 qt. canned tomatoes, cut up
4 c. diced zucchini
grated Parmesan cheese
Preparation

In a Dutch oven, brown sausage with onion; drain excess fat. Add the celery, green pepper, sugar, salt, basil, oregano, pepper and tomatoes.
Cover and simmer 1/2 hour.
Add zucchini; simmer 1/2 hour or more.
Sprinkle with Parmesan cheese, if desired. Yield: 2 quarts.
