Ratatouille - cooking recipe

Ingredients
    2 medium onions, chopped
    1 clove garlic, minced
    3 Tbsp. olive oil
    2 small zucchini, cut into 1/2-inch slices
    2 tomatoes, diced (can use canned tomatoes)
    2 small eggplant, chopped
    1 green pepper, chopped
    1 bay leaf
    little oregano
    mushrooms and any other vegetables (optional)
Preparation
    Cook garlic and onions in oil until tender.
    Add vegetables and bay leaf.
    Add salt, pepper and a little oregano.
    Bring to a boil and simmer 30 minutes.
