Cheesy Scalloped Potatoes - cooking recipe

Ingredients
    8 to 10 large potatoes, peeled, sliced thin
    1/2 c. margarine
    1/2 c. flour
    3 c. milk
    salt
    pepper
    1/2 c. diced onion
    2 c. finely shredded mild Cheddar cheese
Preparation
    Place potatoes in crock-pot (only fill 2/3 full).
    In saucepan, melt butter; add onion.
    Steam until clear, then add flour stirring constantly on medium heat.
    Add milk and simmer until sauce begins to thicken; remove from heat.
    Add 1 1/2 cups of cheese.
    Cook on low 14 to 16 hours.
    Best when done the night before.
    Place remainder of cheese on top.
    Serve when melted.
