Frittata - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1 1/2 c. cooked broccoli or any leftover vegetables
    1/3 lb. mushrooms, sliced
    1 clove garlic, minced
    1/2 bell pepper, diced
    1/2 lb. leftover meat, cubed (chicken, turkey, ham, beef)
    6 eggs, beaten
    1/2 tsp. pepper
    salt to taste
    1 1/2 c. shredded cheese (Cheddar, Swiss any kind)
    1/4 c. freshly grated Parmesan cheese
Preparation
    Heat oil in large frying pan or Dutch oven.
    Add vegetables, mushrooms, garlic and bell pepper.
    Stir, cover and cook for 3 minutes.
    In a bowl, combine meat, eggs, salt and pepper and cheese.
    Stir into the vegetable mixture.
    Pour into a 3-quart casserole dish and bake for 20 minutes at 350\u00b0.
    Top with Parmesan cheese and bake for 5 minutes longer.
    Yield: 4 to 5 servings.
