Ingredients

1 c. sifted flour
1 tsp. baking powder
3 eggs, separated
1 c. sugar
3 Tbsp. water
grated rind of 1 lemon
2 Tbsp. lemon juice
1 c. blueberries
Preparation

Mix and sift flour and baking powder.
Beat egg yolks, then add sugar and beat until thick.
Add water, lemon rind and lemon juice.
Stir in flour and then blueberries.
Fold in stiffly beaten egg whites.
Turn into greased pudding mold and steam 1 hour over rapidly boiling salted water.
Serve with nutmeg or lemon sauce.
Makes approximately 6 servings.
