Sweet Potato Puff - cooking recipe

Ingredients
    3 1/2 lb. sweet potatoes (4 large)
    1/2 c. orange marmalade or apricot preserves
    1/2 c. orange juice
    2 tsp. almond extract
    3 egg whites
    2 Tbsp. almond slivers, toasted lightly
Preparation
    Cook sweet potatoes until tender.
    Cool and peel.
    In large bowl, mash.
    Add marmalade, sugar, orange juice and extract.
    Beat until smooth.
    In separate bowl, beat egg whites to stiff peaks. Fold into potato mixture.
    Coat a 6-cup casserole with nonstick spray.
    Add mixture; sprinkle with almonds.
    Bake at 350\u00b0 until puffy and set, about 40 minutes.
