Orange Roughy Pasta Florentine - cooking recipe

Ingredients
    vegetable cooking spray
    1 clove garlic
    1 tsp. cornstarch
    3/4 tsp. dried basil
    1/8 tsp. salt
    1/8 tsp. pepper
    3/4 c. skim milk
    2 c. lightly packed, finely chopped spinach
    1 lb. orange roughy, cut in bite size pieces
    1/3 c. Parmesan cheese
    4 c. cooked linguine
Preparation
    Coat a 2-quart casserole with cooking spray.
    Add garlic. Microwave on High 30 seconds; add cornstarch and next 3 ingredients.
    Gradually add milk, stirring with a wire whisk until blended.
    Microwave on High 3 to 4 1/2 minutes or until slightly blended, stirring every 1 1/2 minutes.
    Stir in spinach and fish. Cover with lid; microwave on High 4 minutes or until fish flakes. Let stand one minute.
    Stir in cheese and serve over pasta.
