Cucumber Gel - cooking recipe
Ingredients

1 (3 oz.) pkg. lime Jell-O
1 lb. cottage cheese
1/2 onion, finely chopped
1 c. cucumbers, peeled, seeded and finely diced
1/2 c. pecans, chopped
1 c. boiling water
1/2 c. mayonnaise
1 Tbsp. vinegar
Preparation

Use sugar-free gelatin, lite cottage cheese and low-fat mayonnaise to reduce calorie count.
In a shallow 10-inch baking dish, combine gelatin with water, stirring until completely dissolved.
Stir in remaining ingredients until well blended. Chill until firm and serve on lettuce leaves.
Serves 6 to 8.
