Spinach Lasagna - cooking recipe

Ingredients
    1 medium onion, chopped
    2 garlic cloves, minced
    1 Tbsp. olive oil
    2 to 3 Tbsp. water
    1 lb. Ricotta cheese
    1 lb. tofu (optional)
    1/4 c. Parmesan cheese
    1 pkg. frozen, chopped spinach, thawed and drained
    2 egg whites
    1/4 tsp. pepper
    3 Tbsp. parsley
    1/2 lb. lasagna noodles
    6 oz. Mozzarella, grated
    6 c. tomato sauce
Preparation
    Saute the onion and garlic in the olive oil, adding water as needed to keep from sticking.
    Combine the Ricotta, tofu, Parmesan, spinach, egg whites (beaten), black pepper, parsley and sauteed onion and garlic, mixing well.
    Cook the lasagna according to package directions.
