Squash Fritters - cooking recipe

Ingredients
    3 c. yellow squash, sliced
    1 1/2 tsp. salt
    2 eggs
    1 Tbsp. butter
    crushed cracker crumbs
    cooking oil
Preparation
    Cover squash with enough water to cover.
    Boil until tender and add salt and pepper.
    When tender, drain and add 2 eggs and butter.
    Mix ingredients with enough crushed crackers to make the mixture into patties; then roll in crushed cracker crumbs, and you're ready to deep-fry in hot oil.
    Cook until golden brown and serve.
