Pineapple Carrot Cake - cooking recipe

Ingredients
    2 c. sifted flour
    1 1/2 c. sugar
    2 tsp. soda
    1 tsp. cinnamon
    1 tsp. nutmeg
    1/2 tsp. salt
    3 eggs
    1/2 c. oil
    3/4 c. buttermilk
    2 tsp. vanilla
    1 (8 1/2 oz.) can crushed pineapple, drained
    2 c. shredded carrots
    1 c. chopped nuts
    1 c. flaked coconut
Preparation
    Sift dry ingredients into bowl.
    Beat eggs, oil, buttermilk and vanilla; add to dry ingredients.
    Blend well.
    Add the rest of ingredients.
    Bake in greased and floured 9 x 13-inch pan at 350\u00b0 for 45 minutes.
    Remove from oven.
    With fork, poke holes in top to cover surface.
    Immediately spread with hot Buttermilk Glaze or Cream Cheese Frosting.
