Corny Corn Muffins(Lo-Fat) - cooking recipe

1 c. whole wheat flour
1 c. yellow corn meal
4 tsp. baking powder
1/2 tsp. salt (optional)
1/4 c. sugar (if sweeter muffin desired)
2 eggs
1 c. skim or low-fat milk
3 Tbsp. margarine, melted
1 c. cream-style corn*
Preparation

*No cream style corn?
Substitute 1/4 cup milk, buttermilk
or yogurt,
a
pinch of baking soda and corn kernels to make 1 cup.
