Potato Festival Bread - cooking recipe
Ingredients

2 pkg. dry yeast
1/2 c. mashed potatoes
1 Tbsp. salt
2 Tbsp. melted shortening
1/2 c. warm water
1 c. potato water
2 Tbsp. sugar
5 c. flour (approximately)
1 c. milk
Preparation

Soften yeast in warm water.
Mash potatoes while hot, then cool. Add potato water, scalded and cooled milk, salt, sugar and melted shortening to potatoes. Add softened yeast, then stir in flour.
Mix thoroughly, using only enough flour to make a stiff, kneadable dough.
Knead until smooth and elastic.
Place in lightly greased bowl. Cover and let rise until doubled in bulk. Punch down and let rise again for about 1 hour.
Shape into 2 loaves.
Let rise in greased bread pans.
Bake in hot oven at 400\u00b0 for about 50 to 60 minutes or until done.
Turn bread out onto racks to cool.
Makes 2 loaves.
