Parsnip Pie - cooking recipe

Ingredients
    5 c. parsnip, peeled and thinly sliced
    1 c. leeks, sliced
    3 Tbsp. olive oil
    1 1/2 c. extra good Parmesan cheese, grated
    1/2 c. onions, minced
    3 to 4 cloves garlic
    1 prepared vegetable shortening pie crust
Preparation
    Saute parsnips, leeks, onions and garlic in olive oil over medium heat; do not allow this mixture to brown.
    You can mix a little butter with your olive oil if you like.
    Layer mixture alternately with Parmesan cheese into crust.
    Some times we mix in some sauteed spinach as well.
    Season to taste.
    Bake at 350\u00b0 for 45 minutes.
    Top with sliced tomatoes.
    Serves 6 to 8.
