Primavera Vegetables With Linguine - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 1/4 c. chopped onion
    1 Tbsp. garlic, minced
    1 c. sliced zucchini
    1 c. sliced crookneck squash
    1 c. green or red pepper strips
    1 3/4 c. fresh or canned diced tomatoes (reserve juice)
    2/3 c. (6 oz.) tomato paste
    3/4 c. water
    salt and pepper
    1 tsp. dried basil
    1 (9 oz.) pkg. refrigerated linguine
    sliced ripe olives (optional)
    chopped fresh basil (optional)
Preparation
    In large skillet heat oil.
    Saute onion and garlic for 1 minute.
    Add zucchini, yellow squash and bell pepper.
    Saute 3 to 4 minutes.
    Stir in reserved tomato juice, tomato paste, water, salt and pepper.
    Simmer for 5 to 8 minutes or until vegetables are tender.
    Stir in tomatoes and basil and simmer 1 minute.
