Salsa - cooking recipe

Ingredients
    1 1/2 c. cubed tomatoes
    1/4 c. sliced scallion (white part only)
    1/4 c. freshly squeezed lime juice
    1/4 c. freshly chopped fine cilantro
    2 tsp. minced jalapeno pepper (1 large)
Preparation
    Combine all ingredients in a small serving bowl and set aside for the flavors to meld, about 3 hours or overnight is best. Keeps about 1 week. Good on almost everything.
    Makes about 2 cups of salsa.
