Eggplant Delicious - cooking recipe
Ingredients

1 large eggplant
1/2 stick oleo
2 eggs, beaten
1 tsp. Worcestershire sauce
salt and pepper to taste
3/4 c. milk
14 saltines, crumbled
1/4 c. onions, chopped
1 c. grated cheese
dash of Tabasco sauce
Preparation

Peel and boil eggplant until done.
Drain and mash with potato masher.
Stir in oleo while hot. Season. Stir in eggs, milk, crackers and onions.
Pour into casserole and top with cheese. Bake at 350\u00b0 for 40 minutes.
