Lanice'S Potato Soup - cooking recipe

Ingredients
    5 to 6 medium potatoes, peeled and grated
    1 small onion or 1/2 medium onion
    1/2 green pepper (optional)
    2 c. cubed Velveeta cheese
    1/2 c. milk
    water (to cover potatoes)
    salt and pepper to taste
Preparation
    Peel and grate potatoes in large pot.
    Dice onion and green pepper.
    Add water (enough to cover potatoes).
    Bring to a boil; reduce to simmer and cover for 20 to 30 minutes or until potatoes are tender.
    Add cheese and milk; cook 10 minutes longer to melt cheese.
    Add salt and pepper to taste.
