Chicken Breast Monterey - cooking recipe

Ingredients
    6 chicken breasts
    salt and pepper to taste
    flour
    2 Tbsp. butter
    1/2 c. cooking sherry
    1 small onion, sliced
    6 fresh mushrooms, sliced
    1/2 green pepper, sliced
    6 1/4-inch slices Monterey Jack cheese
Preparation
    Sprinkle chicken filets with seasoning.
    Coat with flour. Brown for 5 minutes on each side in butter over medium heat. Reduce heat to low.
    Add next 4 ingredients.
    Simmer, covered, for 45 minutes or until chicken is tender.
    Top each filet with one piece of cheese.
    Let stand, covered, for 5 minutes or until cheese begins to melt.
