Cream Of Broccoli Soup - cooking recipe

Ingredients
    1 lb. broccoli, chopped
    1/4 c. onion, chopped
    4 Tbsp. butter or margarine
    3 Tbsp. flour
    5 c. milk
    2 c. whipping cream
    4 c. grated or minced sharp Cheddar cheese
    salt to taste
    freshly ground white pepper to taste
Preparation
    Steam the broccoli until tender. Chop coarsely and set aside. Saute the onion in butter or margarine until soft, but not brown. Add flour and stir until paste-like.
    Blend in milk and cream. Cook over low heat, stirring constantly, until thickened and smooth.
    Add cheese by the handful, stirring until smooth. Add broccoli and salt and pepper.
    Serves 12.
