Buttermilk Pancakes - cooking recipe

Ingredients
    1 egg, separated
    1 c. buttermilk or sour milk
    1 c. all-purpose flour
    1/2 tsp. salt
    1 tsp. sugar
    3/4 tsp. baking soda
    1 Tbsp. oil
Preparation
    Beat white of egg until light and fluffy meringue forms.
    Set aside.
    Beat yolk of egg; add buttermilk, then dry ingredients and cooking oil.
    Fold mixture into beaten egg white.
    Pour batter onto hot griddle to form pancakes 4-inches in diameter.
    Serve with butter, syrup or jelly.
