Grilled Sausage And Scallops With Peppers, Lemon, Basil And Garlic - cooking recipe

Ingredients
    1 1/2 lb. fresh sea scallops
    4 (3 to 4 oz. each) freshly ground sausage links
    1 large yellow onion, cut into cubes
    1 large red bell pepper, seeded and cut into 12 large sq.
    1 large green pepper, seeded and cut into 12 large sq.
    salt and freshly cracked black pepper to taste
    4 Tbsp. freshly chopped basil
    1 tsp. minced garlic
    2 Tbsp. extra virgin olive oil
    3 Tbsp. lemon juice (about 2 lemons worth)
    2 Tbsp. balsamic vinegar
Preparation
    Blanch the scallops in boiling, salted water for 1 minute. Drain and allow to cool.
    Cook the sausage in boiling water until completely cooked, about 5 minutes.
    Drain and allow to cool. Thread the scallops, sausages and vegetables on skewers and season with salt and pepper.
    Cook the skewers over a medium fire until all the ingredients have attained some brown crusting, about 3 to 4 minutes.
    Slide the ingredients off skewers into a large bowl.
    Add basil, garlic, oil, lemon juice and balsamic vinegar.
    Shake the bowl until everything is well mixed.
