Cream Of Carrot Soup With Homemade Croutons - cooking recipe

Ingredients
    2 Tbsp. butter
    1 small onion, chopped
    1 medium potato, chopped
    1 lb carrots, peeled and chopped
    3 c. vegetable stock
    several pinches of sugar
    2/3 c. half and half
    salt and pepper to taste
    2 Tbsp. butter
    1 tsp. favorite herb (basil or oregano work well)
    2 slices white bread
Preparation
    Melt butter in a pan and saute the onions, potatoes and carrots for ten minutes on med low heat.
    Add stock and sugar and bring slowly to a boil.
    Simmer for 30 minutes.
    In a food processor, puree soup.
    Return to pan and add half and half. Season with salt and pepper and serve.
