Eggplant Au Gratin - cooking recipe

Ingredients
    1 eggplant
    salt, flour and pepper
    olive oil
    4 tomatoes, cored and chopped
    1 lb. mushrooms, sliced
    1 Tbsp. capers
    2 cloves garlic, diced
    1 bunch green onions, chopped
    1 c. tomato sauce
    1/2 c. dry white wine
    1 tsp. Italian herbs
    salt and pepper (if needed)
    1/2 lb. grated Jack cheese
Preparation
    Trim ends from eggplant and slice in 1/2-inch rounds. Sprinkle slices with salt and pepper and roll in flour.
    Heat oil (1/2-inch deep) in large skillet and fry eggplant slices until golden brown on both sides.
    Line bottom and sides of a 1 1/2 quart casserole with eggplant slices.
