Marge'S Apple Puffed Pancake - cooking recipe

Ingredients
    6 eggs
    1 1/2 c. milk
    1 c. flour
    3 Tbsp. sugar
    1 tsp. vanilla
    1/2 tsp. salt
    1/4 tsp. cinnamon
    1/2 c. oleo
    2 apples, peeled and sliced thin
    3 Tbsp. brown sugar
Preparation
    Preheat oven to 425\u00b0.
    In blender or large bowl, mix eggs, milk, flour, granulated sugar, vanilla, salt and cinnamon until blended.
    If using a mixer, batter will be lumpy.
    Melt oleo in a 12-inch fluted quiche pan or 13 x 9-inch baking dish.
    Add apple slices.
    Return to oven until oleo is melted and sizzles.
    Do not brown.
    Remove from oven and immediately pour batter over apples. Sprinkle with brown sugar.
    Bake 20 minutes until puffed and brown. Serve with maple syrup.
    This is a nice brunch recipe.
    Serves 6 to 8.
