Zucchini Relish - cooking recipe
Ingredients

10 c. zucchini, unpeeled and chopped
4 c. chopped onion
4 large sweet bell peppers, chopped
6 to 8 jalapeno peppers, chopped
1/4 c. salt
4 1/2 c. sugar
2 1/2 c. vinegar
1 Tbsp. dry mustard
1 Tbsp. turmeric
4 Tbsp. celery seed
1 Tbsp. black pepper
1 Tbsp. prepared mustard
2 Tbsp. cornstarch
Preparation

Put the first 4 ingredients into a container and cover with 1/4 cup salt.
Let stand overnight.
Thoroughly drain next day.
