Chicken Pea Pod Salad Oriental - cooking recipe
Ingredients

2 c. cooked spiral macaroni
2 c. trimmed blanched pea pods
12 oz. cubed cooked chicken or turkey
1 c. sliced green onions
1 c. julienne sliced jicama
5 Tbsp. plus 1 tsp. reduced calorie mayonnaise
2 tsp. soy sauce
1/4 tsp. pepper
1/8 tsp. ginger
2 tsp. sherry
8 lettuce leaves
Preparation

In a large bowl, combine first 5 ingredients.
In small bowl, combine remaining ingredients, except lettuce.
Pour over chicken mixture; mix well.
Cover and chill at least 3 hours.
Line serving bowl with lettuce leaves; spoon salad over lettuce.
Makes 4 servings.

1 bread exchange, 4 vegetable exchange, 2 fat exchange, 3 calories optional exchange and 3 protein exchanges.
