Nannie'S Eggplant Parmesan - cooking recipe

Ingredients
    1 c. chopped onion
    1 clove chopped garlic or 2 tsp. minced garlic
    2 Tbsp. vegetable oil
    1 can tomato sauce (8 oz.)
    1 can tomatoes (16 oz.)
    1/2 tsp. salt
    1/2 tsp. basil
    1/2 tsp. oregano
    1 Tbsp. sugar
    1 large eggplant
    1 (8 oz.) pkg. Mozzarella cheese
Preparation
    Saute chopped onion and garlic in vegetable oil.
    Add chopped tomatoes and tomato sauce.
    Add salt, basil, oregano and sugar. Bring to a boil.
    Simmer for 30 minutes.
