Ingredients

1/2 c. boiling water
1/2 c. raisins
3/4 to 1 c. brown sugar
1/2 c. shortening
1 egg, unbeaten
1 tsp. lemon extract
1/2 c. finely shredded raw carrots
1 1/2 c. sifted all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
Preparation

Pour boiling water over raisins and soak 5 minutes; drain. Combine sugar, shortening, egg and lemon extract in mixing bowl; beat well.
Stir in carrots and drained raisins.
Sift together flour, baking powder and salt; add to first mixture and blend well. Drop by teaspoonfuls onto greased baking sheet.
Bake at 375\u00b0 for 10 to 12 minutes.
Makes 3 dozen.
