Irish Potatoes - cooking recipe

Ingredients
    1 medium baked potato or mashed
    1 lb. confectioners sugar
    1 tsp. vanilla
    1 to 1 1/2 c. flaked coconut
    cinnamon
Preparation
    In medium size mixing bowl mash the hot pulp of baked potato with a fork.
    Add the sugar and blend well.
    (If the pulp is not hot enough to melt sugar, place bowl in larger bowl with hot water.)
    Add vanilla and coconut; work into mixture thoroughly. Form dough into small rounds and roll each one in cinnamon lightly.
