Fluffy Coconut Pudding - cooking recipe

Ingredients
    1 envelope unflavored gelatin
    1/4 c. cold water
    3 Tbsp. boiling water
    3 egg whites
    1/8 tsp. salt
    6 Tbsp. sugar
    1/2 tsp. vanilla extract
    1 c. whipping cream, whipped
    2/3 c. canned moist-type flaked coconut
    Mandarin oranges (for garnish)
Preparation
    Soften gelatin in cold water.
    Add boiling water and stir until dissolved.
    Cool to room temperature.
    Beat egg whites with salt until frothy.
    Add sugar, 1 tablespoon at a time, and beat well after each addition.
    Continue beating until mixture holds a peak when beater is lifted.
    Slowly beat gelatin.
    Add vanilla to whipped cream.
    Mix and fold into egg whites.
    Fold in coconut. Cover and chill at least 4 hours.
    Garnish with Mandarin oranges and serve.
