Instant Rice Pudding - cooking recipe

Ingredients
    1 c. instant rice
    1/4 tsp. salt
    1/8 tsp. nutmeg
    1/4 c. raisins (optional)
    1/2 tsp. vanilla
    2 1/2 c. milk, divided
    1/4 tsp. cinnamon
    1/2 c. sugar
    2 eggs, slightly beaten
Preparation
    Combine rice, 2 cups milk, salt, cinnamon, sugar, nutmeg and raisins.
    Bring to a rolling boil, stirring constantly.
    Reduce heat; boil slowly for 10 minutes, stirring occasionally.
    Mix eggs with remaining milk.
    Slowly add to hot mixture, stirring constantly.
    Cook over medium heat until thickened.
    Add vanilla. Let cool.
    Makes 6 servings.
