Coconut Bread - cooking recipe

Ingredients
    3 c. flour
    2 tsp. baking powder
    1/2 tsp. salt
    1/2 tsp. baking soda
    2 c. sugar
    1 c. vegetable oil
    4 eggs, slightly beaten
    2 tsp. coconut extract
    1 c. buttermilk
    1 c. shredded coconut
    1 c. chopped walnuts
Preparation
    Combine flour, baking powder and salt; set aside.
    In large bowl combine sugar, oil, eggs and extract.
    Add dry ingredients alternately with buttermilk; stir just until moistened.
    Fold in coconut and walnuts.
    Pour into 2 greased and floured 8 1/2 by 4 1/2 inch loaf pans.
    Bake at 325\u00b0 for 1 hour or until bread tests done.
    Cool 10 minutes in pans before removing to a wire rack to cool completely.
